Ingredients

2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup shredded cheddar cheese

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions

Start by washing and peeling the sweet potatoes. Cut them into wedges, about ½ inch thick.

In a large mixing bowl, toss the sweet potato wedges with olive oil, garlic powder, paprika, salt, and black pepper until well coated.

Preheat your air fryer at 400°F (200°C) for about 5 minutes.

Place the seasoned sweet potato wedges in a single layer in the air fryer basket. You might need to do this in batches to avoid overcrowding.

Air fry the wedges for 15-18 minutes, shaking the basket halfway through to ensure even crisping.

Once the sweet potatoes are golden and crispy, sprinkle the shredded cheddar cheese and grated Parmesan cheese evenly over the wedges.

Return the basket to the air fryer and cook for an additional 3-5 minutes, or until the cheese is melted and bubbly.

Carefully remove the cheesy sweet potato wedges from the air fryer and transfer them to a serving platter.

Garnish with chopped fresh parsley before serving.
