The cooking process is crucial for any soup, and in this Tomato Bliss soup, simmering plays a pivotal role in blending flavors. As the tomatoes and aromatics cook together, the heat helps to meld the spices, creating a harmonious base for your dish. For the best results, simmer the mixture for at least 20 to 30 minutes, allowing the flavors to deepen and the acidity of the tomatoes to mellow. Stir occasionally to prevent sticking and to ensure an even distribution of heat.

Ingredients

For the Creamy Tomato Basil Soup:

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 cans (14 oz each) crushed tomatoes

2 cups vegetable broth or chicken broth

1 teaspoon sugar (to balance acidity)

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional for a kick)

Salt and pepper to taste

½ cup heavy cream (or coconut milk for a vegan option)

1 cup fresh basil leaves, chopped

Juice of 1 lemon

For the Grilled Cheese:

4 slices sourdough bread

4 slices sharp cheddar cheese (or your favorite cheese)

2 tablespoons butter, softened

Fresh basil leaves (for garnish, optional)

Instructions

Sauté Aromatics: Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes, or until translucent. Add the minced garlic and cook for an additional minute until fragrant.

Add Tomatoes and Spices: Stir in the crushed tomatoes, vegetable broth, sugar, oregano, red pepper flakes, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes to meld the flavors.

Blend the Soup: After simmering, remove the pot from heat. Use an immersion blender to blend the soup until smooth. (Alternatively, you can transfer the soup in batches to a blender, but be careful with hot liquids!)

Stir in Cream and Basil: Return the pot to low heat and stir in the heavy cream (or coconut milk), chopped basil, and lemon juice. Taste and adjust seasoning if needed. Let it simmer for another 5 minutes to heat through.

Prepare Grilled Cheese: While the soup is simmering, heat a skillet over medium heat. Butter one side of each slice of sourdough. Place two slices in the skillet, butter side down, and layer two slices of cheddar cheese on top of each.

Grill Until Golden: Top with the remaining two slices of bread, butter side up. Grill for about 4-5 minutes on each side, or until golden brown and the cheese is melted. Remove from the skillet and cut each sandwich diagonally.

Serve: Ladle the warm creamy tomato basil soup into bowls. Garnish with fresh basil leaves if desired. Serve with the grilled cheese sandwiches on the side for dipping.
