Ingredients

1 cup orzo pasta

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (fire-roasted for extra flavor)

1 cup vegetable broth

1 cup heavy cream

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh basil leaves, chopped (for garnish)

Instructions

Preheat your oven to 375°F (190°C). Grease a 9x9 inch (or similar size) baking dish with cooking spray or a little olive oil.

Cook the Orzo: In a large pot of salted boiling water, cook the orzo according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Combine Ingredients: Add the diced tomatoes (with juices), vegetable broth, heavy cream, dried basil, dried oregano, salt, and pepper to the skillet. Bring the mixture to a gentle simmer and let it cook for about 5 minutes, stirring occasionally.

Mix the Orzo: Stir the cooked orzo into the creamy tomato mixture, ensuring the pasta is well-coated. Add half of the shredded mozzarella and half of the Parmesan cheese, stirring until melted and combined.

Transfer to Baking Dish: Pour the orzo mixture into your prepared baking dish, spreading it evenly. Top with the remaining mozzarella and Parmesan cheese.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is golden and bubbly.

Garnish and Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving. Enjoy your creamy tomato basil orzo bake!
