Creamy Taco Pasta Shells

12 large pasta shells

1 pound ground beef (or turkey)

1 packet taco seasoning (about 1 ounce)

1 can (10 oz) diced tomatoes with green chilies

1 cup sour cream

1 cup cream cheese, softened

1 cup shredded cheddar cheese

½ cup black beans, drained and rinsed

½ cup corn, canned or frozen

¼ cup chopped green onions

1 cup grated Monterey Jack cheese (for topping)

Fresh cilantro for garnish (optional)

Salt and pepper to taste

Instructions
 

Prepare the Pasta: Start by boiling a large pot of salted water. Once boiling, cook the large pasta shells according to package instructions until al dente. Drain and set aside.

    Cook the Meat: In a large skillet over medium heat, add the ground beef (or turkey). Cook until browned, then drain the excess fat. Season with taco seasoning as per the instructions on the packet, adding a little water if needed. Stir well to combine and let simmer for about 5 minutes.

      Mix in the Goodies: Add the can of diced tomatoes with green chilies, black beans, corn, sour cream, and softened cream cheese to the cooked meat. Stir until everything is well blended and creamy. Taste and season with salt and pepper as needed.

        Fill the Shells: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish. Take each pasta shell and carefully fill it with the creamy taco mixture, placing it in the baking dish seam-side up. Continue until all shells are filled.

          Top with Cheese: Once all the shells are arranged in the dish, sprinkle the grated Monterey Jack cheese evenly over the top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and starting to turn golden.
