Creamy Spinach & Ricotta Calzones

1 cup ricotta cheese

1 cup fresh spinach, chopped

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 clove garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 pound pizza dough (store-bought or homemade)

1 egg (for egg wash)

Marinara sauce (for dipping)

Instructions
 

Prepare the Filling:

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Introduce the chopped spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and let it cool slightly.

      Mix the Cheeses:

        In a mixing bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, dried oregano, red pepper flakes (if using), salt, and black pepper. Stir in the cooled spinach and garlic until well combined.

          Preheat the Oven:

            Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

              Roll Out the Dough:

                On a floured surface, roll out the pizza dough into a 1/4-inch thick circle, about 8 inches in diameter. Cut the circle in half to create two semi-circles.

                  Fill the Calzones:

                    Place a generous scoop of the spinach and cheese filling on one half of each semi-circle, leaving about 1/2 inch of space from the edge. Make sure not to overfill.

                      Seal the Calzones:

                        Fold the other half of the semi-circle over the filling to create a pocket. Press the edges tightly to seal, and then crimp them with a fork for an extra secure seal.

                          Brush with Egg Wash:

                            In a small bowl, whisk the egg. Brush the egg wash over the top of each calzone for a beautiful golden color during baking.

                              Bake:

                                Transfer the calzones to the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until they are puffed and golden brown.

                                  Serve:

                                    Allow the calzones to cool for a few minutes before serving. Slice them in half for easier dipping and serve warm with marinara sauce on the side.
