Creamy Roasted Red Pepper Chicken Lasagna

9-12 lasagna noodles (depending on the size of your dish)

2 cups cooked, shredded chicken (rotisserie chicken works well)

2 cups roasted red peppers, jarred, drained and chopped

15 oz ricotta cheese

2 cups mozzarella cheese, shredded

1 cup Parmesan cheese, grated

2 cups heavy cream

3 cloves garlic, minced

1 teaspoon Italian seasoning (oregano, basil, thyme mix)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Prep the Noodles: Boil a large pot of salted water. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside on a layer of parchment paper to prevent sticking.

    Make the Sauce: In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Stir in chopped roasted red peppers, heavy cream, Italian seasoning, salt, and pepper. Allow to simmer for 5-7 minutes until slightly thickened. Remove from heat.

      Prepare the Cheesy Mixture: In a large bowl, combine shredded chicken, ricotta cheese, half of the mozzarella, and half of the Parmesan cheese. Mix until well combined. Season with salt and pepper.

        Assemble the Lasagna: Preheat your oven to 375°F (190°C). In a 9x13 inch baking dish, spread a thin layer of the roasted red pepper sauce on the bottom. Place a layer of lasagna noodles over the sauce.

          - Spread half of the chicken and cheese mixture over the noodles.

            - Spoon a layer of the roasted red pepper sauce over the chicken mixture.

              - Repeat the layers (noodles, chicken mixture, sauce) until all ingredients are used, finishing with noodles and sauce on top.

                Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheese over the top layer of sauce.

                  Bake: Cover the dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray). Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes or until the cheese is bubbly and golden brown.

                    Garnish and Serve: Let the lasagna cool for 10 minutes before slicing. Garnish with fresh basil leaves if desired. Serve warm and enjoy!
