2 tablespoons olive oil

1 pound (about 450g) boneless, skinless chicken breasts, cut into bite-sized pieces

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups low-sodium chicken broth

1 cup heavy cream

12 ounces (about 340g) uncooked penne pasta

1 cup broccoli florets (fresh or frozen)

1 cup grated Parmesan cheese

1 tablespoon lemon juice

Fresh parsley, for garnish (optional)

Instructions
 

Heat the Oil: In a large pot or Dutch oven, heat the olive oil over medium heat.

    Cook the Chicken: Add the chicken pieces to the pot and season with salt, pepper, onion powder, and Italian seasoning. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Use a slotted spoon to remove the chicken from the pot and set aside.

      Sauté Garlic: In the same pot, add the minced garlic and sauté for about 1 minute, until fragrant but not burnt.

        Make the Sauce: Pour in the chicken broth and heavy cream, stirring well to combine all the flavors. Bring the mixture to a simmer.

          Add Pasta: Add the uncooked penne pasta to the pot. Stir to ensure the pasta is submerged in the liquid. Cover and cook on medium heat for approximately 10 minutes, stirring occasionally, until the pasta is al dente.

            Add Broccoli: After 10 minutes, add the broccoli florets. Stir and cover again, cooking for an additional 3-5 minutes, until the pasta is tender and the broccoli is bright green and cooked through.

              Combine and Finish: Return the cooked chicken to the pot. Add the grated Parmesan cheese and lemon juice, stirring well to combine everything. Let it simmer for another 2 minutes until the cheese has melted into a creamy sauce. Adjust seasoning with more salt and pepper, if necessary.
