8 oz fettuccine or your choice of pasta

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz cremini or button mushrooms, sliced

4 cups fresh spinach leaves

1 cup heavy cream

1 cup vegetable broth

1 teaspoon dried thyme

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

⅓ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté Aromatics: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and sauté for an additional 1 minute until fragrant.

      Add Mushrooms: Increase the heat to medium-high and add the sliced mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms are browned and have released their moisture, about 5-7 minutes.

        Incorporate Spinach: Add the fresh spinach to the mushroom mixture. Cook until the spinach has wilted, about 2 minutes.

          Create the Sauce: Pour the heavy cream and vegetable broth into the skillet. Stir in the dried thyme, red pepper flakes, salt, and pepper. Bring the mixture to a gentle simmer.
