1 cup heavy cream

1 cup grated Parmesan cheese

¼ teaspoon red pepper flakes (optional)

2 tablespoons fresh parsley, chopped (for garnish)

Lemon zest (from 1 lemon)

Prepare the Zoodles: Use a spiralizer to turn your zucchini into zoodles (zucchini noodles). If you don’t have a spiralizer, you can use a vegetable peeler to create long strips. Place the zoodles on paper towels to absorb excess moisture.

    Sauté the Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to let it burn.

      Make the Cream Sauce: Pour in the heavy cream and bring it to a gentle simmer. Add the grated Parmesan cheese, salt, black pepper, and red pepper flakes (if using). Stir consistently until the cheese has melted and the sauce is creamy and well combined.

        Cook the Zoodles: Add the zoodles to the skillet, tossing them in the garlic Parmesan sauce. Cook for 2-3 minutes or until the zoodles are just tender but still have a slight bite (al dente). Do not overcook to avoid sogginess.
