Ingredients
  

1 cup pumpkin puree (canned or fresh)

8 oz fettuccine pasta

1 cup heavy cream

1 cup vegetable or chicken broth

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1/2 tsp nutmeg

Salt and pepper to taste

2 tbsp olive oil

1 cup spinach (optional, for added nutrition)

Fresh basil for garnish

Instructions
 

Prepare the Base: In the crockpot, combine the pumpkin puree, heavy cream, vegetable or chicken broth, garlic powder, onion powder, nutmeg, and a pinch of salt and pepper. Stir well until all the ingredients are evenly blended.

    Cook the Pasta: Add the fettuccine pasta into the crockpot. Make sure the pasta is submerged in the creamy mixture. If it's not fully covered, add a little more broth or cream.

      Slow Cook: Cover the crockpot and cook on low for 3-4 hours, or on high for 1.5-2 hours, stirring halfway through if possible. Keep an eye on the pasta to ensure it doesn’t overcook.

        Stir in Cheese: About 15 minutes before serving, add the grated Parmesan cheese and the olive oil to the crockpot. Stir until the cheese has melted and the sauce is creamy.

          Add Spinach (Optional): If desired, stir in the spinach towards the end of cooking and let it wilt for about 5 minutes.

            Serve: Once the pasta is cooked and the sauce is velvety, taste and adjust seasoning if needed. Serve warm, garnished with fresh basil and extra Parmesan cheese if desired.
