Creamy Corn Chowder

4 cups fresh corn kernels (or frozen if out of season)

1 medium onion, diced

2 medium potatoes, peeled and diced

2 carrots, diced

2 celery stalks, diced

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a lighter version)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley or chives for garnish

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables begin to soften and the onion is translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Add Potatoes and Corn: Add the diced potatoes and corn kernels to the pot. Stir everything together to coat the veggies with oil and garlic.

      Pour in Broth: Add the vegetable broth, thyme, smoked paprika, salt, and pepper. Bring the mixture to a boil, then reduce to a simmer. Cover and let it cook for about 15-20 minutes, or until the potatoes are tender.

        Blend for Creaminess: Once the potatoes are cooked, use an immersion blender to puree half of the chowder. This will create a creamy texture while leaving some chunks for added depth. Alternatively, you can carefully transfer half of the chowder to a blender and blend until smooth, then return it to the pot.

          Finish with Cream: Stir in the heavy cream (or coconut milk) into the chowder. Let it simmer for an additional 5 minutes. Taste and adjust the seasoning with more salt and pepper if needed.

            Serve: Ladle the chowder into bowls and garnish with freshly chopped parsley or chives. Serve hot with crusty bread or crackers on the side.
