Creamy Chicken Pesto Tortellini

8 oz cheese tortellini (fresh or frozen)

2 tablespoons olive oil

1 lb chicken breast, cut into bite-sized pieces

2 cloves garlic, minced

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

1 cup cherry tomatoes, halved

Fresh basil leaves, for garnish

1/4 teaspoon red pepper flakes (optional, for heat)

Instructions
 

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the chicken pieces. Season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until chicken is browned and cooked through.

      Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.

        Prepare the Creamy Sauce: Reduce the heat to medium-low, and pour in the heavy cream. Stir to combine and let it simmer for a couple of minutes to thicken.
