1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups fresh spinach, chopped

1/2 cup (120ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) cherry tomatoes, halved

3 cloves garlic, minced

1 medium onion, diced

1 tsp Italian seasoning

Salt and pepper to taste

2 tbsp olive oil

1/4 cup (25g) grated Parmesan cheese

1/2 tsp red pepper flakes (optional for a kick)

Instructions
 

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Sear the chicken until golden brown on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

    Sauté the Aromatics: In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant.

      Create the Creamy Base: Pour in the chicken broth and scrape the bottom of the skillet to deglaze, incorporating all the brown bits. Allow it to simmer for 2 minutes. Then, stir in the heavy cream and Italian seasoning. Bring the mixture to a gentle simmer.

        Add Spinach and Tomatoes: Stir in the chopped spinach and halved cherry tomatoes. Cook for 2-3 minutes until the spinach wilts and the tomatoes begin to soften.

          Combine and Finish: Add the seared chicken back to the skillet. Stir in the grated Parmesan cheese and red pepper flakes if using. Let it simmer for another 3-4 minutes until everything is well combined, and the sauce is slightly thickened.
