Ingredients

12 oz penne pasta

2 tbsp olive oil

1 lb boneless, skinless chicken breasts, diced

3 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

4 cups fresh spinach

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

Fresh basil for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken. Season with Italian seasoning, salt, and pepper. Cook until the chicken is golden brown and fully cooked through, about 5-7 minutes.

Add Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Incorporate Spinach: Add the fresh spinach to the skillet and cook for 2-3 minutes, stirring frequently, until wilted.

Make it Creamy: Pour in the heavy cream and bring the mixture to a simmer. Gradually stir in the Parmesan cheese until melted and the sauce is creamy. Add the halved cherry tomatoes and combine.

Combine with Pasta: Toss the cooked penne pasta into the skillet, ensuring it's well coated with the creamy sauce. Adjust seasoning with additional salt and pepper if needed.

Serve: Remove from heat and garnish with fresh basil. Serve immediately while hot.
