1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

8 oz (225g) cremini mushrooms, sliced

1 medium onion, finely chopped

3 cloves garlick minced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1/2 cup (50g) grated Parmesan cheese

2 tbsp olive oil

1 tbsp butter

1 tsp dried thyme

1 tsp dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cooked rice or pasta (for serving)

Instructions
 

Sauté the Chicken: In a large skillet over medium heat, add olive oil and butter. Once hot, add the chicken pieces. Season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is browned and cooked through (internal temperature should reach 165°F/75°C). Remove the chicken from the skillet and set it aside.

    Cook the Vegetables: In the same skillet, add the chopped onion and sauté for 2-3 minutes until translucent. Add the minced garlic and sliced mushrooms and cook for an additional 5-6 minutes until the mushrooms are tender and any liquid has evaporated.

      Make the Sauce: Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits. Stir in the heavy cream, Parmesan cheese, thyme, and oregano. Bring the mixture to a gentle simmer, allowing it to thicken slightly for about 4-5 minutes.
