For many, the essence of comfort food is often found in creamy, cheesy dishes that remind us of family gatherings, shared laughter, and hearty conversations around the dinner table. One of my all-time favorites has always been mashed potatoes, that classic side dish that pairs well with almost anything. However, as I’ve explored the versatility of vegetables, I stumbled upon a delightful alternative that not only retains that creamy goodness but also elevates the nutritional value: Cheesy Cauliflower Bliss Mash.

Creamy Cheddar Cauliflower Mash

Ingredients
  

1 large head of cauliflower, cut into florets

1 cup sharp cheddar cheese, grated

1/2 cup cream cheese, softened

1/4 cup milk (or more for desired consistency)

3 tablespoons butter

2 cloves garlic, minced

Salt and black pepper to taste

1 tablespoon chopped fresh chives (for garnish)

Instructions
 

Steam the Cauliflower: Place the cauliflower florets in a steamer basket over boiling water. Cover and steam for about 10-12 minutes, or until the cauliflower is tender when pierced with a fork.

    Sauté Garlic: In a small pan, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned. Remove from heat.

      Blend Ingredients: In a large mixing bowl or using a food processor, combine the steamed cauliflower, sautéed garlic with butter, cream cheese, milk, half of the cheddar cheese, salt, and black pepper. Blend until smooth and creamy. If you prefer a thicker texture, add less milk, or if you like it creamier, add more.

        Add Remaining Cheese: Once blended to your desired consistency, stir in the remaining cheddar cheese until well incorporated. Taste and adjust seasoning with more salt and pepper if necessary.

          Serve: Spoon the creamy cheddar cauliflower mash into a serving dish, and sprinkle with chopped fresh chives for garnish. Serve hot as a delicious and healthy side dish.
