2 cups elbow macaroni

4 cups fresh broccoli florets

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 cup shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

½ teaspoon Dijon mustard (optional for extra flavor)

½ cup breadcrumbs (for topping)

Freshly chopped parsley (for garnish)

Instructions
 

Cook the Pasta and Broccoli: Begin by bringing a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. In the last 3 minutes of cooking, gently add the broccoli florets to the pot. Drain the pasta and broccoli together and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute, stirring constantly to form a roux. Slowly pour in the whole milk while continuously whisking to avoid lumps. Continue to cook, stirring frequently, until the mixture thickens, about 5-7 minutes.

      Add the Cheeses: Once the sauce is thickened, reduce the heat to low. Stir in the sharp cheddar and Gruyère cheeses until melted and smooth. Add the garlic powder, onion powder, salt, pepper, and Dijon mustard, if using. Mix well to combine.

        Combine Pasta and Sauce: Add the drained pasta and broccoli mixture into the cheese sauce, stirring gently until everything is well-coated in the creamy goodness.

          Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased 9x13-inch baking dish.

            Add Breadcrumbs: In a small bowl, combine the breadcrumbs with a little melted butter (if desired) and sprinkle evenly over the mac and cheese for a crunchy topping.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and crispy.
