Creamy Basil Chicken Pasta Bake

12 oz penne pasta

2 cups cooked chicken breast, shredded or diced

1 cup cherry tomatoes, halved

2 cups fresh spinach, chopped

1/2 cup grated Parmesan cheese

2 cups shredded mozzarella cheese

1 cup heavy cream

1 cup chicken broth

4 cloves garlic, minced

1 cup fresh basil leaves, chopped (plus extra for garnish)

1 tsp Italian seasoning

Salt and black pepper, to taste

1 tbsp olive oil

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the pasta: In a large pot of salted boiling water, cook the penne pasta according to the package instructions until al dente. Drain and set aside.

      Sauté the garlic: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

        Prepare the creamy sauce: Pour in the heavy cream and chicken broth, then bring to a simmer. Stir in the Italian seasoning, salt, and black pepper. Let it simmer for 5 minutes to thicken slightly.

          Combine ingredients: Add the cooked pasta, shredded chicken, cherry tomatoes, spinach, chopped basil, and half of the grated Parmesan cheese to the skillet. Stir everything together until well combined and coated in the sauce.

            Transfer to baking dish: Pour the pasta mixture into a greased 9x13 inch baking dish. Spread it out evenly.

              Add cheeses on top: Sprinkle the remaining mozzarella and Parmesan cheese on top of the pasta mixture.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the top is slightly golden.

                  Garnish and serve: Once done, remove from the oven, let it cool for a few minutes, and garnish with extra chopped basil before serving.
