Ingredients

1 lb ground turkey

2 medium sweet potatoes, peeled and cubed

1 cup carrots, diced

1 cup peas (fresh or frozen)

1 small onion, chopped

3 cloves garlic, minced

1 tablespoon tomato paste

1 teaspoon Worcestershire sauce

1/2 teaspoon dried thyme

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

1/4 cup chicken broth

2 tablespoons olive oil

1/2 cup milk (or plant-based milk for a dairy-free version)

Salt to taste

Fresh parsley, for garnish

Instructions

Prepare the Sweet Potatoes: In a medium pot, bring salted water to a boil. Add the cubed sweet potatoes and cook until tender, about 15-20 minutes. Drain and return to the pot. Add milk and a pinch of salt, then mash until smooth and creamy. Set aside.

Cook the Turkey Mixture: In a large skillet, heat olive oil over medium heat. Add chopped onion and diced carrots. Sauté until the onion is translucent, about 5 minutes. Add minced garlic, and cook for an additional minute, stirring frequently.

Add Ground Turkey: Increase the heat to medium-high, add the ground turkey, and break it apart with a spatula. Cook until the turkey is browned and cooked through, about 7-10 minutes.

Flavor the Filling: Stir in the tomato paste, Worcestershire sauce, dried thyme, smoked paprika, and black pepper. Mix well, then add the chicken broth. Allow to simmer for 2-3 minutes until the mixture thickens slightly. Stir in the peas last and remove from heat.

Assemble the Shepherd's Pie: Preheat your oven to 400°F (200°C). In a baking dish, spread the turkey mixture evenly at the bottom. Top generously with the mashed sweet potatoes, smoothing the surface with a spatula.

Bake: Place the assembled pie in the preheated oven and bake for 20-25 minutes until the top is slightly golden and the filling is bubbly.

Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving. Enjoy your warm, cozy Shepherd's Pie!
