2 tablespoons olive oil

1 medium onion, diced

4 cloves garlic, minced

1 carrot, diced

1 can (28 ounces) crushed tomatoes

2 cups vegetable broth (or chicken broth for non-vegetarians)

1 teaspoon sugar (optional)

Salt and pepper to taste

1 cup fresh basil leaves, chopped

1/2 cup heavy cream (or coconut milk for a vegan option)

For the Grilled Cheese:

8 slices of sourdough or whole grain bread

4 tablespoons butter, softened

8 ounces sharp cheddar cheese, sliced (or your favorite cheese)

Optional: 1/4 teaspoon garlic powder or herbs for seasoning

For the Tomato Basil Soup:

    In a large pot over medium heat, add the olive oil. Once heated, add the diced onion and sauté for about 4-5 minutes until translucent.

      Stir in the minced garlic and diced carrot, cooking for an additional 3-4 minutes until fragrant.

        Add the crushed tomatoes and vegetable broth to the pot. If using, mix in the sugar to balance the acidity of the tomatoes. Season with salt and pepper to taste.

          Bring the mixture to a simmer, then cover and let it cook for about 15-20 minutes, stirring occasionally.

            Once the soup has thickened slightly, stir in the chopped basil and heavy cream. Allow to simmer for another 5 minutes, then remove from heat.

              Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer it to a blender in batches. Adjust seasoning as needed.

                For the Grilled Cheese:

                  Heat a non-stick skillet over medium heat. While the skillet is warming, butter one side of each slice of bread.

                    Place 4 slices of bread, buttered side down, on the skillet. Layer the cheese slices generously on each piece.

                      Top with the remaining slices of bread, buttered side up. Cook for about 4-5 minutes until the bread is golden brown and the cheese begins to melt.

                        Flip each sandwich carefully and cook the other side for another 4-5 minutes until golden and crispy.
