4 whole wheat pita pockets

1 medium cucumber, thinly sliced

1 medium carrot, grated

1 bell pepper (red or yellow), diced

½ cup cherry tomatoes, halved

½ cup purple cabbage, shredded

¼ cup fresh cilantro or parsley, chopped

2 tablespoons lemon juice

1 teaspoon olive oil

Salt and pepper, to taste

Optional: Feta cheese or a sprinkle of za'atar for extra flavor

Prep the Veggies: Start by washing all your vegetables thoroughly. Slice the cucumber, dice the bell pepper, and halve the cherry tomatoes. Grate the carrot and shred the cabbage. Set aside.
