Ingredients

8 oz fusilli or rotini pasta

1 cup cherry tomatoes, halved

1 cup mini mozzarella balls (bocconcini)

1 cup fresh basil leaves

½ cup sun-dried tomatoes, chopped

¼ cup balsamic glaze

¼ cup extra virgin olive oil

2 cloves garlic, minced

Salt and pepper to taste

Crushed red pepper flakes (optional, for heat)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool completely.

Prepare the Dressing: In a small bowl, whisk together the balsamic glaze, olive oil, minced garlic, salt, and pepper. If you enjoy a little spice, add a pinch of crushed red pepper flakes.

Mix the Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, mozzarella balls, fresh basil, and sun-dried tomatoes. Pour the dressing over the mixture and toss gently until everything is evenly coated.

Assemble the Jars: Using clean, dry mason jars or similar containers, layer the ingredients. Start with a layer of the pasta mixture, followed by some basil leaves, then cheese, and tomatoes. Repeat layers until the jars are filled, leaving some space at the top.

Chill: Seal the jars tightly and refrigerate for at least 30 minutes to allow the flavors to meld. They can be stored in the fridge for up to 3 days.

Serve: To serve, simply shake the jar to mix everything again, or take out the contents and serve on a plate or bowl. Great as a refreshing lunch, side dish, or picnic treat!
