Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon pure vanilla extract

4 large eggs

1 cup sour cream

¼ cup all-purpose flour

1 tablespoon lemon juice

A pinch of salt

Instructions

Prepare the Crust: Preheat your oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Mix until the crumbs resemble wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake the crust for 10 minutes, then remove from the oven and let it cool.

Make the Filling: In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth and creamy. Gradually add 1 cup of granulated sugar and continue to mix until fully incorporated.

Incorporate the Eggs: Add the vanilla extract and beat in the eggs, one at a time, ensuring it's well mixed after each addition. Avoid overmixing to keep the filling light and fluffy.

Stir in the Remaining Ingredients: Add the sour cream, flour, lemon juice, and a pinch of salt to the cream cheese mixture. Mix until just combined and smooth.

Bake the Cheesecake: Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 55-60 minutes, or until the edges are set, and the center is slightly jiggly.

Cool Down: Once baked, turn off the oven and crack the oven door. Allow the cheesecake to cool in the oven for about an hour. This helps prevent cracking.

Chill: After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight. This step is crucial for perfect texture and flavor.

Serve: Once chilled, run a thin knife around the edges of the pan to loosen. Carefully release the springform pan. Serve plain or with your favorite fruit toppings or sauces.
