8 oz elbow macaroni

2 cups fresh spinach, chopped

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups milk (whole or 2%)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon mustard powder (optional)

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

2 cups shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs (optional, for topping)

1 tablespoon olive oil (optional, for breadcrumbs)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente according to package instructions. Drain and set aside.

    Sauté the Spinach: In the same pot, melt 1 tablespoon of butter over medium heat. Add the chopped spinach and sauté until wilted, about 2-3 minutes. Remove from heat and set aside.

      Prepare the Cheese Sauce: In a separate saucepan, melt the remaining 1 tablespoon of butter over medium heat. Whisk in the flour and cook for about 1 minute until bubbling but not browned. Slowly whisk in the milk until smooth. Continue to cook, whisking frequently, until the mixture thickens, roughly 5-7 minutes.

        Season the Sauce: Stir in garlic powder, onion powder, mustard powder (if using), salt, and black pepper. Remove from heat and add the shredded cheddar cheese and grated Parmesan cheese. Stir until completely melted and smooth.

          Combine Ingredients: Add the cooked macaroni and sautéed spinach to the cheese sauce, mixing until well combined. If desired, adjust seasoning to taste.

            Prepare for Baking: Preheat your oven to 350°F (175°C). If you want a crunchy topping, mix breadcrumbs with olive oil in a small bowl.
