Classic Mac and Cheese with Hidden Veggies

8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 ½ cups milk

¼ cup butter

¼ cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

½ tsp mustard powder

Salt and pepper to taste

1 cup finely grated zucchini (about 1 small zucchini)

1 cup finely chopped cauliflower (about 1 small head)

1 cup frozen spinach, thawed and drained

½ cup breadcrumbs (optional, for topping)

2 tbsp olive oil (if using breadcrumbs)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the macaroni according to package instructions until al dente. Drain and set aside.

    Prepare the Veggies: While the pasta cooks, finely grate the zucchini and chop the cauliflower into small pieces. If you are using fresh spinach instead of frozen, wilt it in a pan with a little water and drain well.

      Make the Cheese Sauce:

        - In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour to form a roux and cook for about 2 minutes until slightly golden.

          - Slowly whisk in the milk, and continue to stir until the mixture thickens and starts to bubble (about 5-7 minutes).

            - Reduce the heat to low and add the garlic powder, onion powder, mustard powder, salt, and pepper. Stir until well combined.

              - Gradually add the shredded cheddar and mozzarella cheese, stirring until melted and smooth.

                Combine Ingredients:

                  - In a large mixing bowl, combine the cooked macaroni, grated zucchini, chopped cauliflower, and spinach. Pour the cheese sauce over the top, mixing well until everything is evenly coated.

                    Bake (Optional):

                      - If you desire a crispy topping, preheat your oven to 350°F (175°C).

                        - Transfer the mac and cheese to a greased baking dish. In a small bowl, mix breadcrumbs with olive oil and sprinkle evenly over the mac and cheese.

                          - Bake for 20-25 minutes or until bubbly and golden on top.
