For the crust:

1 cup unsalted butter, melted

1/2 cup granulated sugar

2 cups all-purpose flour

1/4 teaspoon salt

1 teaspoon vanilla extract

For the lemon filling:

4 large eggs

1 cup granulated sugar

1/4 cup all-purpose flour

Zest of 2 medium lemons

1/2 cup fresh lemon juice (about 2-3 lemons)

Powdered sugar for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or line it with parchment paper for easy removal.

    Make the Crust:

      - In a mixing bowl, combine melted butter, 1/2 cup granulated sugar, and vanilla extract.

        - Stir in 2 cups of flour and 1/4 teaspoon salt until the mixture is just combined.

          - Press the crust mixture evenly into the bottom of the prepared baking dish. Use the back of a measuring cup to ensure it's packed down firmly.

            Blind Bake the Crust: Bake the crust in the preheated oven for about 15-18 minutes, or until it turns lightly golden. Remove it from the oven and set aside to cool slightly while you prepare the filling.

              Prepare the Lemon Filling:

                - In a separate bowl, whisk together the 4 large eggs and 1 cup granulated sugar until slightly frothy.

                  - Add the 1/4 cup of flour, lemon zest, and fresh lemon juice, and mix until smooth and well combined.

                    Combine and Bake:

                      - Pour the lemon filling over the pre-baked crust.

                        - Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and doesn't jiggle when you gently move the pan.

                          Cool and Serve:

                            - Once baked, remove from the oven and allow to cool at room temperature for about an hour.

                              - Once cool, refrigerate for at least 2 hours, or until completely chilled.

                                - Dust with powdered sugar before cutting into squares.
