Ingredients

2 tablespoons olive oil

1 medium onion, finely diced

2 garlic cloves, minced

2 medium carrots, sliced

2 celery stalks, sliced

6 cups low-sodium chicken broth

2 cups rotisserie chicken, shredded

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper, to taste

2 cups egg noodles

Fresh parsley, chopped, for garnish

Optional: Lemon wedges for serving

Instructions

Heat the Olive Oil: In a large pot over medium heat, add the olive oil. Once hot, add the diced onion and sauté for about 3 minutes, until the onion is translucent.

Add Vegetables: Stir in the minced garlic, sliced carrots, and celery. Sauté for an additional 5 minutes, stirring occasionally, until the vegetables are slightly tender.

Pour in the Broth: Increase the heat to high and pour in the chicken broth. Add the shredded rotisserie chicken, thyme, oregano, and bay leaf. Stir to combine.

Season: Bring the mixture to a boil, then reduce the heat to a simmer. Season with salt and pepper to taste.

Cook the Noodles: Stir in the egg noodles and let the soup simmer for about 8-10 minutes, or until the noodles are cooked al dente.

Finish the Soup: Remove the bay leaf. Taste and adjust seasoning if necessary. If desired, squeeze a bit of fresh lemon juice for a brightness.

Serve: Ladle the hot soup into bowls and garnish with freshly chopped parsley. Serve warm with lemon wedges on the side for added flavor.
