Ingredients

1 lb (450g) ground beef

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil

1/2 tsp salt

1/4 tsp black pepper

6 cups beef broth

2 cups diced tomatoes (canned or fresh)

1 medium onion, diced

2 carrots, sliced

2 stalks celery, sliced

1 cup frozen peas

1 bay leaf

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Make the Meatballs: In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, basil, salt, and black pepper. Mix until well combined. Form the mixture into meatballs, about 1 inch in diameter.

Bake the Meatballs: Place the meatballs on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-20 minutes, or until browned and cooked through.

Prepare the Soup Base: In a large pot over medium heat, add a splash of olive oil. Sauté the diced onions, carrots, and celery for about 5-7 minutes until the vegetables are softened.

Add Broth and Tomatoes: Pour in the beef broth and diced tomatoes, bringing the mixture to a simmer. Add the bay leaf and cook for an additional 10 minutes.

Incorporate Meatballs: Once the soup is simmering, carefully add the baked meatballs to the pot. Allow the soup to simmer for another 10-15 minutes, incorporating the flavors.

Finish with Peas: Just a few minutes before serving, stir in the frozen peas and let them cook until heated through.

Serve: Remove the bay leaf from the soup. Ladle the soup into bowls and garnish with fresh parsley. Enjoy warm!
