Cinnamon Sugar Donut Muffins

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ cup granulated sugar

1 large egg

¾ cup milk (preferably whole milk)

¼ cup unsalted butter, melted

1 tsp vanilla extract

¼ cup granulated sugar (for coating)

1 Tbsp ground cinnamon (for coating)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and prepare a muffin pan by greasing it or lining it with paper liners.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and 1 tsp of cinnamon.

      Mix Wet Ingredients: In another bowl, whisk the sugar, egg, milk, melted butter, and vanilla extract until combined.

        Combine Mixtures: Gradually pour the wet ingredients into the dry ingredients. Stir until just combined; do not overmix. The batter will be slightly lumpy.

          Fill Muffin Cups: Evenly distribute the batter into the prepared muffin pan, filling each cup about 2/3 full.

            Bake: Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center comes out clean.

              Prepare Cinnamon Sugar Coating: While the muffins are baking, mix the remaining ¼ cup of granulated sugar and 1 Tbsp of ground cinnamon in a small bowl.

                Coat Muffins: Once the muffins are done baking, allow them to cool in the pan for about 5 minutes. Then, remove them from the pan and roll each warm muffin in the cinnamon sugar mixture until fully coated.
