1 cup medjool dates, pitted

1 cup raw almonds

1/2 cup unsweetened cocoa powder

1/4 cup almond butter

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup shredded coconut (for rolling)

Optional: 2 tablespoons maple syrup or honey (if you prefer sweeter)

Instructions
 

Prepare the Base: In a food processor, add the pitted medjool dates and raw almonds. Pulse until finely chopped and a sticky mixture starts to form. Scrape down the sides as needed.

    Add Flavorings: Add the unsweetened cocoa powder, almond butter, vanilla extract, and sea salt to the almond-date mixture. If you prefer your truffles sweeter, drizzle in the maple syrup or honey.

      Mix Well: Process the mixture until all ingredients are combined and a thick, sticky dough-like consistency is achieved. It should hold together when pressed between your fingers.

        Shape the Truffles: Use a small cookie scoop or your hands to form the mixture into bite-sized balls (about 1 inch in diameter). Place the formed truffles on a plate lined with parchment paper.
