Ingredients

2 medium sweet potatoes, diced

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 jalapeño, finely chopped (seeds removed for less heat)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon salt

½ teaspoon black pepper

1 can (15 oz) black beans, drained and rinsed

4 large eggs (optional)

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Lime wedges (for serving)

Instructions

Prep the Sweet Potatoes: Begin by washing and peeling the sweet potatoes. Cut them into small, even dice to ensure they cook uniformly.

Cook the Sweet Potatoes: In a large skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and a pinch of salt. Sauté for about 10-15 minutes, stirring occasionally, until they are just tender and starting to brown.

Sauté Aromatics and Veggies: Add the chopped onion to the skillet and cook for about 3-4 minutes until it becomes translucent. Stir in the minced garlic, red bell pepper, and jalapeño, cooking for an additional 2-3 minutes until they soften.

Season the Mixture: Sprinkle in the ground cumin, smoked paprika, chili powder, black pepper, and remaining salt. Mix well to coat the vegetables with the spices and cook for another minute to allow the flavors to meld.

Add the Black Beans: Gently fold in the black beans and cook for an additional 2-3 minutes, letting them heat through.

Cook the Eggs (optional): If using eggs, create small wells in the mixture and crack an egg into each well. Cover the skillet and cook for about 5 minutes or until the eggs are cooked to your desired level (sunny-side up or slightly set).

Garnish and Serve: Remove the skillet from the heat. Top your sweet potato hash with chopped cilantro. Serve warm with avocado slices and lime wedges on the side for added flavor.
