Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon cumin

Salt, to taste

Zest of 1 lime

Juice of 1 lime

Fresh cilantro, chopped (optional, for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Chickpeas: After rinsing the chickpeas, pat them dry with a clean kitchen towel to remove excess moisture. This will help them roast better.

Season the Chickpeas: In a large bowl, combine the dried chickpeas with olive oil, chili powder, smoked paprika, garlic powder, onion powder, cumin, and salt. Toss well until every chickpea is evenly coated.

Roast the Chickpeas: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Roast in the preheated oven for about 25-30 minutes, stirring halfway through, until they are golden, crispy, and fragrant.

Add Lime Zest and Juice: Remove the chickpeas from the oven and immediately sprinkle with lime zest and drizzle with lime juice while still hot. Toss to ensure the flavors are well combined.

Finishing Touches: Allow the chickpeas to cool slightly before serving. If desired, garnish with fresh chopped cilantro for added freshness.

Serve and Enjoy: These spicy, zesty roasted chickpeas make for a delicious snack, a topping for salads, or a crunchy addition to grain bowls.
