Chicken Tacos with Peach Slaw

For the Chicken:

1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

Juice of 1 lime

For the Peach Slaw:

1 large ripe peach, diced

2 cups green cabbage, finely shredded

1/2 cup red cabbage, finely shredded

1/4 cup cilantro, chopped

1 tablespoon honey

1 tablespoon apple cider vinegar

Salt and pepper to taste

For Assembly:

8 small corn tortillas

Lime wedges, for serving

Extra cilantro for garnish (optional)

Instructions
 

Prepare the Chicken:

    - In a bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, lime juice, salt, and pepper. Add the chicken thighs, coating them evenly with the spice mixture. Let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

      Make the Peach Slaw:

        - In a large mixing bowl, combine diced peaches, shredded green and red cabbage, and chopped cilantro.

          - In a small bowl, whisk together honey, apple cider vinegar, salt, and pepper. Pour over the peach mixture and toss until well combined. Set aside.

            Cook the Chicken:

              - Preheat a grill or skillet over medium-high heat. Once hot, add the marinated chicken thighs. Grill or cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes.

                Warm the Tortillas:

                  - While the chicken rests, warm the corn tortillas on a dry skillet over medium heat for about 30 seconds on each side, or until pliable.

                    Assemble the Tacos:

                      - Slice the grilled chicken into strips. To each tortilla, add a few slices of chicken and top generously with peach slaw.

                        Serve:

                          - Garnish with extra cilantro if desired, and serve with lime wedges for squeezing over the top.
