1 lb chicken sausage (Italian or any preferred flavor), sliced

2 medium zucchini, chopped

1 bell pepper (red or yellow), diced

1 cup cherry tomatoes, halved

1 medium red onion, sliced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh basil or parsley, for garnish

Lemon wedges, for serving

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Veggies: In a large bowl, combine the chopped zucchini, bell pepper, cherry tomatoes, and red onion. Drizzle with 1 tablespoon of olive oil, and season with salt, pepper, oregano, and smoked paprika. Toss until everything is well coated.

      Roast the Veggies: Spread the seasoned vegetables evenly on a baking sheet lined with parchment paper. Roast in the oven for 20-25 minutes, stirring halfway through, until they are tender and slightly caramelized.

        Cook the Sausage: While the veggies roast, heat a large skillet over medium heat. Add the remaining tablespoon of olive oil and the sliced chicken sausage. Sauté for about 5-7 minutes, until the sausage is browned and cooked through. Incorporate the minced garlic and cook for an additional minute, stirring frequently.
