1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 carrot, shredded

1 teaspoon fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 mango, ripe and diced

1 tablespoon honey

1 teaspoon lime juice

1 head of butter lettuce or iceberg lettuce, leaves separated

Fresh cilantro leaves, for garnish

Chopped peanuts or cashews, for topping (optional)

Prepare the Mango Glaze: In a small saucepan over medium heat, combine the diced mango, honey, lime juice, and a pinch of salt. Cook for about 5-7 minutes, stirring occasionally until the mango is soft and the mixture has thickened slightly. Remove from heat and set aside.

    Cook the Chicken Mixture: In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and cook for about 2-3 minutes until translucent. Stir in the garlic and ginger, cooking for an additional minute.
