Cheesy Spinach Stuffed Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped (or 1 cup frozen, thawed and drained)

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon Italian seasoning

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the pasta shells: In a large pot of salted boiling water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the filling: In a large bowl, combine the chopped spinach, ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, egg, minced garlic, salt, black pepper, and Italian seasoning. Mix until everything is well incorporated.

        Stuff the shells: Gently fill each cooked pasta shell with a generous spoonful of the spinach and cheese mixture, using your hands or a small spoon.

          Layer the baking dish: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells in a single layer on top of the sauce.

            Top them off: Pour the remaining marinara sauce over the stuffed shells, ensuring they are covered. Sprinkle the remaining 1/2 cup of mozzarella cheese on top.

              Bake: Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Garnish and serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before serving.
