Cheesy Mexican Street Corn Dip

2 cups frozen sweet corn (thawed)

1/2 cup mayonnaise

1/2 cup sour cream

1 cup crumbled cotija cheese (or feta cheese)

1 cup shredded Monterey Jack cheese

1 jalapeño, seeded and finely chopped

2 tablespoons fresh lime juice

2 cloves garlic, minced

1/2 teaspoon chili powder

1/4 teaspoon smoked paprika

1/4 cup fresh cilantro, chopped (optional for garnish)

Salt and pepper to taste

Tortilla chips for serving

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Combine Base Ingredients: In a large mixing bowl, combine the thawed sweet corn, mayonnaise, and sour cream. Stir until the ingredients are well blended.

      Add the Cheese: Fold in the crumbled cotija cheese and shredded Monterey Jack cheese into the mixture, mixing gently to combine.

        Incorporate Extras: Add the finely chopped jalapeño, lime juice, minced garlic, chili powder, smoked paprika, and season with salt and pepper to taste. Mix well again to ensure all ingredients are evenly distributed.

          Transfer to Baking Dish: Pour the mixture into a medium-sized baking dish or oven-safe skillet, spreading it out evenly.

            Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the dip is bubbly and the cheese is melted and slightly golden on top.

              Garnish & Serve: Remove from the oven and let it cool for a minute. If desired, sprinkle fresh cilantro on top for garnish. Serve warm with tortilla chips for dipping.
