1 large head of cauliflower, cut into florets

2 medium russet potatoes, peeled and cubed

4 cloves garlic, minced

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1/4 cup sour cream

1/2 cup milk (or more for desired consistency)

1 teaspoon onion powder

1/2 teaspoon garlic powder

Salt and pepper to taste

1/4 cup grated Parmesan cheese

2 tablespoons chopped fresh chives (for garnish)

Optional: 2 tablespoons crispy bacon bits for topping

Cook the Vegetables: In a large pot, add the cauliflower florets and cubed potatoes. Fill with water and bring to a boil over medium-high heat. Add a pinch of salt and cook until the vegetables are fork-tender, about 15-20 minutes. Drain well.

    Mash Together: In the same pot, add the cooked cauliflower and potatoes along with minced garlic. Using a potato masher or a hand mixer, mash until smooth.

      Add the Cheese and Cream: Mix in the sharp cheddar cheese, cream cheese, sour cream, and milk. Stir until everything is well combined and creamy. Adjust the milk accordingly to achieve your desired consistency, then season with onion powder, garlic powder, salt, and pepper.

        Prepare for Baking: Preheat your oven to 375°F (190°C). Transfer the cheesy cauliflower mixture into a greased 2-quart baking dish, spreading it evenly.
