Cheesy Broccoli & Rice Casserole

2 cups steamed broccoli florets

1 cup uncooked white or brown rice

4 cups vegetable broth (or chicken broth)

2 cups shredded sharp cheddar cheese

1 cup cream of mushroom soup (or homemade equivalent)

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

1 cup panko breadcrumbs (for topping)

2 tablespoons olive oil

Fresh parsley (for garnish, optional)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch casserole dish with a bit of olive oil or non-stick spray.

    Prepare the rice: In a medium saucepan, bring the vegetable broth to a boil. Add the rice, reduce the heat to low, and cover. Cook according to package instructions until the rice is tender and all the liquid is absorbed (about 15-20 minutes).

      Mix the base ingredients: In a large mixing bowl, combine the cooked rice, steamed broccoli florets, garlic powder, onion powder, salt, black pepper, paprika, cream of mushroom soup, and milk. Stir until well mixed.

        Add cheese: Gently fold in 1.5 cups of shredded cheddar cheese into the mixture, reserving the remaining 0.5 cup for topping.

          Assemble the casserole: Pour the mixture into the prepared casserole dish, spreading it evenly.

            Prepare the topping: In a separate bowl, combine the panko breadcrumbs with 2 tablespoons of olive oil, and mix until the breadcrumbs are well-coated.

              Add toppings: Sprinkle the remaining cheddar cheese over the casserole, followed by the prepared panko breadcrumbs.

                Bake: Place the casserole in the preheated oven and bake uncovered for 25-30 minutes or until the top is golden brown and bubbly.

                  Cool and serve: Once baked, allow the casserole to cool for about 5 minutes. Garnish with fresh parsley if desired, and serve warm.
