2 cups broccoli florets (fresh or frozen)

1 cup long-grain rice (uncooked)

2 cups vegetable broth (or chicken broth)

1 cup sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1/2 cup cream cheese, softened

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/4 teaspoon red pepper flakes (optional, for a kick)

1/2 cup breadcrumbs (for topping)

2 tablespoons olive oil or melted butter (for breadcrumbs)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium saucepan, bring the vegetable or chicken broth to a boil. Add the uncooked rice, reduce heat, cover, and simmer for about 18-20 minutes, or until the rice is tender and liquid is absorbed. Remove from heat and let it sit for a few minutes, then fluff with a fork.

      Prepare the Broccoli: If using fresh broccoli, steam the florets for about 5-7 minutes until bright green and slightly tender. If using frozen, simply thaw and drain well.

        Mix the Cheese Sauce: In a large mixing bowl, combine the softened cream cheese, garlic powder, onion powder, black pepper, salt, and red pepper flakes. Mix until smooth. Stir in the cheddar and mozzarella cheese until evenly combined.
