Cheesy Beef and Rice Casserole Delight

1 lb (450g) ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 cup uncooked white rice

2 cups beef broth

1 can (15 oz) diced tomatoes with green chilies

1 cup frozen corn

1 cup black beans, drained and rinsed

2 cups shredded cheddar cheese

1 tsp smoked paprika

1 tsp onion powder

1 tsp garlic powder

Salt and pepper, to taste

2 tbsp olive oil

Chopped fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent. Then, add the ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess grease if necessary.

      Combine Ingredients: In a large mixing bowl, combine the cooked beef mixture, uncooked rice, beef broth, diced tomatoes (with juice), frozen corn, black beans, smoked paprika, onion powder, garlic powder, and salt and pepper to taste. Mix well until all ingredients are evenly distributed.

        Transfer to Casserole Dish: Pour the mixture into a greased 9x13-inch casserole dish. Spread it out evenly.

          Add Cheese: Sprinkle 1 cup of shredded cheddar cheese evenly over the top of the casserole.

            Bake: Cover the casserole dish tightly with aluminum foil and bake in the preheated oven for 35 minutes. After 35 minutes, remove the foil and continue baking for an additional 10-15 minutes, or until the rice is tender and the cheese is bubbly and golden.
