Cheddar Chicken and Rice Stuffed Zucchini

4 medium zucchinis

1 cup cooked shredded chicken (rotisserie is perfect)

1 cup cooked rice (white or brown)

1 cup sharp cheddar cheese, shredded (plus extra for topping)

1/2 cup cream cheese, softened

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

1 teaspoon dried Italian herbs (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Cut the zucchinis in half lengthwise and scoop out the seeds and some flesh with a spoon to create boats. You want to leave enough flesh on the sides for stability. Drizzle the insides with olive oil and season with salt and pepper.

      Make the Filling: In a large mixing bowl, combine the shredded chicken, cooked rice, cheddar cheese, cream cheese, green onions, garlic powder, onion powder, and Italian herbs. Mix until well combined. Taste and adjust seasoning with salt and pepper as needed.

        Stuff the Zucchini: Fill each zucchini boat generously with the chicken and rice mixture, pressing lightly to pack it in.

          Top with Cheese: Sprinkle additional shredded cheddar cheese on top of the stuffed zucchinis.

            Bake: Place the stuffed zucchinis in a baking dish (you might need to secure them with toothpicks or place them close together to prevent tipping) and bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese on top is bubbly and golden.

              Serve: Remove from the oven and let cool for a few minutes. Garnish with extra chopped green onions if desired, then serve warm and enjoy your delicious cheesy stuffed zucchinis!
