Ingredients

1 cup all-purpose flour

1 cup whole wheat flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1/2 cup shredded sharp cheddar cheese

1/2 cup crumbled goat cheese

1/4 cup diced salami

1/4 cup diced prosciutto

1/4 cup chopped olives (green or black)

1/2 cup sun-dried tomatoes, chopped

1/2 cup buttermilk

2 large eggs

1/4 cup unsalted butter, melted

2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with non-stick spray.

Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, black pepper, and garlic powder until well combined.

Add Cheeses and Meats: Gently fold in the shredded cheddar, crumbled goat cheese, diced salami, prosciutto, olives, and sun-dried tomatoes. Make sure everything is evenly distributed.

Mix Wet Ingredients: In another bowl, whisk together the buttermilk, eggs, and melted butter until smooth.

Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry mixture and stir gently until just combined. Be careful not to overmix—the batter should be slightly lumpy.

Spoon into Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 2/3 full. Sprinkle chopped fresh parsley on top for added flavor and color.

Bake: Bake in the preheated oven for about 20-25 minutes, or until the muffins are lightly golden and a toothpick inserted in the center comes out clean.

Cool and Serve: Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. Serve warm or at room temperature.
