Ingredients
  

1 pound large shrimp, peeled and deveined

2 cups fresh spinach leaves

1 cup mixed salad greens

1 cup fresh blueberries

1/2 avocado, sliced

1/4 cup red onion, thinly sliced

1/4 cup crumbled feta cheese

1/4 cup walnuts, chopped

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

Salt and pepper to taste

Juice of 1 lemon

Instructions
 

Prepare the Shrimp: In a large skillet over medium heat, add 1 tablespoon of olive oil. Season the shrimp with salt, pepper, and the juice of half the lemon. Once the oil is hot, add the shrimp and cook for about 2-3 minutes per side or until they turn pink and opaque. Remove from heat and let cool slightly.

    Make the Dressing: In a small bowl, whisk together the remaining olive oil, balsamic vinegar, honey, and the juice of the other half of the lemon. Adjust the seasoning with salt and pepper to taste.

      Assemble the Salad: In a large salad bowl, combine the fresh spinach and mixed greens as a base. Add the fresh blueberries, sliced avocado, red onion, crumbled feta cheese, and chopped walnuts.
