1/2 cup almond flour (or all-purpose flour)

1/4 cup brown sugar

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/3 cup melted coconut oil (or unsalted butter)

For the Yogurt Layer:

2 cups Greek yogurt (plain or vanilla)

1 tablespoon honey or agave syrup (optional)

To Assemble:

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Berry Layer:

    - In a medium bowl, combine the mixed berries, honey (or maple syrup), vanilla extract, and lemon juice. Gently toss the mixture without crushing the berries. Let it marinate for 15-20 minutes at room temperature to enhance the flavors.

      Make the Crumble Topping:

        - Preheat your oven to 350°F (175°C).

          - In a large bowl, mix the rolled oats, almond flour, brown sugar, cinnamon, and salt. Drizzle in the melted coconut oil and stir until the mixture is well combined and crumbly.

            - Spread the crumble mixture onto a parchment-lined baking sheet and bake for 15-20 minutes, stirring halfway until golden and crispy. Remove from the oven and allow to cool.

              Prepare the Yogurt Layer:

                - In a separate bowl, mix the Greek yogurt with honey or agave syrup if desired. This adds sweetness and helps complement the tartness of the berries.

                  Assemble the Parfaits:
