For the Beef Skewers:

1 lb beef sirloin, cut into 1-inch cubes

3 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Wooden or metal skewers (if using wooden, soak them in water for 30 minutes)

For the Mango Salsa:

1 ripe mango, peeled and diced

1 red bell pepper, finely chopped

1 small red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

Salt to taste

Marinate the Beef: In a mixing bowl, combine olive oil, soy sauce, honey, minced garlic, ground cumin, smoked paprika, salt, and pepper. Add the beef cubes and mix well to coat. Cover and let marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Prepare Mango Salsa: In a separate bowl, combine the diced mango, red bell pepper, red onion, jalapeño (if using), lime juice, and fresh cilantro. Gently mix all the ingredients together. Season with salt to taste. Set aside to let the flavors meld.

      Skewering the Beef: Preheat your grill or grill pan to medium-high heat. Thread the marinated beef cubes onto skewers, making sure not to overcrowd them. Leave a little space between each piece for even cooking.

        Grilling the Skewers: Place the beef skewers on the grill and cook for about 2-3 minutes per side for medium-rare, or longer if you prefer more doneness. Rotate the skewers to ensure all sides are grilled evenly and attain a nice char.
