1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup BBQ sauce (your favorite brand)

1 packet (1 oz) ranch seasoning mix

2 cups baby potatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 green bell pepper, diced

1 medium red onion, sliced

2 tablespoons olive oil

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

Fresh parsley, chopped (for garnish)

Prepare the Foil Packs: Preheat your grill to medium-high heat (about 375°F/190°C). Gather four 12x12-inch sheets of heavy-duty aluminum foil.

    Season the Chicken: In a large bowl, combine the chicken pieces with the BBQ sauce and ranch seasoning mix. Stir until the chicken is thoroughly coated.

      Combine Vegetables: In another bowl, toss the halved baby potatoes, corn, bell peppers, and red onion with olive oil, salt, and pepper. Mix well to ensure even coating.

        Assemble the Packs: On each piece of foil, layer equal portions of the vegetable mixture, followed by the BBQ ranch chicken. If desired, sprinkle shredded cheddar cheese on top.
