4 large russet potatoes

1 cup cooked shredded BBQ chicken (store-bought or homemade)

1 cup shredded sharp cheddar cheese

½ cup sour cream

¼ cup chopped green onions (scallions)

1 tablespoon olive oil

Salt and pepper, to taste

Optional: ¼ cup cooked, crumbled bacon for added flavor

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Wash the russet potatoes thoroughly and pat them dry. Prick each potato several times with a fork, then rub them with olive oil. Season with salt and pepper.

      Bake the Potatoes: Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until the potatoes are tender when pierced with a fork.

        Cool and Scoop: Once cooked, remove the potatoes from the oven and let them cool slightly. When cool enough to handle, carefully cut each potato in half lengthwise. Use a spoon to scoop out some of the flesh, leaving a ¼-inch border for sturdiness.

          Prepare the Filling: In a bowl, combine the shredded BBQ chicken, half of the cheddar cheese, salt, and pepper (and bacon if using). Mix until well combined.

            Fill the Skins: Spoon the BBQ chicken mixture into each potato half, packing it gently.

              Top with Cheese: Sprinkle the remaining cheddar cheese evenly over each filled potato skin.

                Bake Again: Place the filled potato skins on a baking sheet and return them to the oven. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
