Basil Pesto Grilled Veggie Sandwich

Ingredients
  

1 cup fresh basil leaves, packed

1/3 cup pine nuts (or walnuts)

1/2 cup grated Parmesan cheese

2-3 cloves garlic, minced

1/2 cup extra virgin olive oil

Salt and pepper to taste

2 large zucchinis, sliced into thin rounds

1 bell pepper (any color), sliced

1 red onion, sliced into rings

1 cup cherry tomatoes, halved

4 slices of whole grain or sourdough bread

1/2 cup mozzarella cheese, shredded (optional)

Balsamic glaze for drizzling (optional)

Instructions
 

Make the Pesto: In a food processor, combine the basil, pine nuts, Parmesan cheese, and minced garlic. Pulse until finely chopped. Gradually add the olive oil while the processor is running, until the mixture is smooth. Season with salt and pepper to taste.

    Prepare the Veggies: Preheat your grill or a grill pan over medium heat. In a bowl, toss the sliced zucchinis, bell pepper, red onion, and cherry tomatoes with a drizzle of olive oil, salt, and pepper.

      Grill the Vegetables: Once your grill is hot, add the vegetables and grill for about 4-5 minutes per side, or until they are tender and have nice grill marks. Remove from heat and set aside.

        Assemble the Sandwich: Spread a generous amount of the basil pesto on one side of each slice of bread. If using, sprinkle half of the mozzarella on two of the slices. Layer the grilled vegetables on top of the mozzarella.

          Top and Grill the Sandwich: Place the remaining slices of bread on top (with pesto side down), and optionally spread a little more pesto on the outside of the sandwich for extra flavor. Grill the sandwiches in a pan or on a griddle over medium heat, pressing down gently with a spatula. Grill for about 3-4 minutes per side, or until the bread is golden brown and crispy.

            Serve: Remove from heat and let cool for a minute. Drizzle with balsamic glaze if desired, slice in half, and serve immediately!
