Ingredients

1 pound chicken breast tenders

1 cup panko breadcrumbs

1 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp black pepper

1/2 tsp salt

2 large eggs

2 tbsp Dijon mustard

Cooking spray or olive oil

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.

Prepare the Coating: In a mixing bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, black pepper, and salt. Mix well until fully combined.

Prepare the Egg Wash: In another bowl, whisk together the eggs and Dijon mustard until smooth and well blended.

Coat the Chicken: Dip each chicken tender into the egg wash, ensuring it's fully coated. Let any excess drip off, then transfer it to the breadcrumb mixture. Press the breadcrumbs onto the chicken tenders to ensure they are well coated on all sides.

Arrange on Baking Sheet: Place the coated chicken tenders on the prepared baking sheet in a single layer. Lightly spray the tops with cooking spray or drizzle with olive oil for extra crispiness.

Bake: Bake the chicken tenders in the preheated oven for 15-20 minutes, or until they are golden brown and cooked through (the internal temperature should reach 165°F/74°C). Flip the tenders halfway through baking to ensure even crisping.

Serve: Once done, remove from the oven and let them cool for a couple of minutes. Serve warm with your favorite dipping sauces like ranch, honey mustard, or marinara.
